Challenge #2: Choux Pastry

Choux pastry is a very versatile pastry; it can be made for savoury or sweet recipes: eclairs, cheese gougères, cream puffs or choquettes, just to name a few variations. Are you scared? I’m a little scared but very excited at the same time – I would love to make eclairs, but I may just stick to little choquettes, filled with pastry cream and dipped in chocolate to start.

This is the recommended recipe to follow, but you can follow a different recipe depending on your need – savoury or sweet. Be creative! Have fun with it – these can also be split in half like mini sandwiches and filled with different meats, cheese, creams and fruits.

Craving Fab Pastries: Challenge #1 RESULTS

This month’s challenge was to make French Pastry Dough, following David Lebovitz’s recipe on his site. The challenge was to use the pastry dough to make anything you like!

This challenge was a little daunting – I’ve never made pastries before, I’ve never even made pie dough before; so I was quite keen on making sure to get it right. I had dreamed of filling it with a chocolate ganache, that was it for me, chocolate ganache. And then suddenly the Food Network was on and Laura Calder from French Food at Home was making ‘simple’ dishes like a cheese soufflé and an Applesauce Apple Tart. I was inspired.

The pastry dough was easy to make, completely delicious – it was flaky, buttery and light! The applesauce and sliced apples on top were perfection – I wasn’t sure if any of us would like it – we’re a chocolate family! But the apples were so good! And a slice of this tart with a scoop of Haagen-Daaz Vanilla Bean Ice Cream was delicious! Full play-by-play of what I did can be found here!

Craving Fab Pastries Challenge #1

Welcome to the first Craving Fab Pastries Challenge! Angela from Craving Cupcakes and myself have started this challenge simply to force ourselves to make pastries – a task that seemed daunting to both of us! On the first of every month there will be a new challenge posted. Anybody can join in – all you need to do is make the challenge by the end of the month, post it on your blog along with your experience and photos of it. At the end of the month come back here and you will find a post with a McLinky and you can add your link to it as well!

Challenge #1: French Tart Dough

Have you ever made a home-made pie or tart shell – from scratch? The challenge is to make this tart shell from scratch and then fill it with anything your heart desires! Of course, you can stop at the shell, but I’m so interested in what you really want to fill it with – chocolate, apples, berries, peanut butter…. I can go on!

We will be following this recipe from David Lebovitz’s site, which has very good instructions on how to make it. You can substitute or change whatever you wish as long as you still come out with a tart shell – you can make one large one, or tons of tiny ones, whatever suits your needs! And of course – take pictures and brag about what you’ve made!
